That's easy. We all have childhood memories of food, family, friends, and gatherings that revolved around something delicious. I remember the holidays in our kitchen like it was yesterday—my nana and all my tías working together, making tamales, laughing, telling stories, filling the house with this palpable buzz of joy and the rich, mouthwatering scent of masa and spiced meat.
Then there were Sunday nights when my grandmother would lay out these full-blown Italian feasts. Picture it: her dining table loaded with homemade pasta, meatballs the size of a child’s fist, and sauces that had simmered on the stove for hours. Our family would come together, arguing in that loving, loud Italian way over who had the best sauce, and I’d sit back and just absorb the magic of it all.
And how could I forget elementary school, during our multi-cultural day? Esteban brought empanadas from Argentina, and tasting them was like being transported halfway across the world. It was this eye-opening moment for a kid like me, who realized that food wasn’t just something you ate—it was something you experienced. It represented travel, adventure, and a world that was bigger and richer than I’d ever imagined.

As of today, my primary focus has been on the development of the platform to ensure it meets the needs of both food reviewers and restaurants. However, as of this past weekend, I’ve transitioned into a more marketing-focused role. I’m actively seeking our first handful of content creators to join us as food reviewers and begin creating content.
I believe that by starting with just a few passionate creators, we can establish a foundation that showcases the potential of our platform. Once these initial food reviewers begin to earn money and gain recognition, it will create a snowball effect. The truth is, the earliest adopters of One Bite Foodie will not only have the best chance to make money but also to gain significant fame and credibility within the foodie community.
For businesses, the goal is to have at least a dozen establishments on the platform to really get the ball rolling. This critical mass will help attract more creators and generate buzz around what we’re doing. Both content creators and businesses typically discover One Bite Foodie through targeted social media campaigns, local food events, and community engagement initiatives that highlight our unique offerings.
Once they find us, the next steps are straightforward. Oh, I’d love to rave about our incredible customers—this journey has been as much about the people I’ve met along the way as it has been about building One Bite Foodie itself.
One story that really touched my heart and left an impact involves the weekend One Bite Foodie officially went live. I had started developing the platform while visiting Cancun, but to celebrate its launch, I headed down to Tulum, Mexico. While exploring the vibrant streets, I met Mandeep, the visionary behind Rabbit Hole and Radio Tulum. What Mandeep has created in Tulum is nothing short of amazing. His venues have become cultural hubs, bringing people together through incredible music events and a sense of community that’s rare to find. Featuring Mandeep and his projects on the platform was a no-brainer. Seeing him share and repost the content we created about his work was immensely gratifying. He’s become one of our biggest fans, and it’s been a joy to support such an integral part of Tulum’s music and arts scene.
But the serendipity didn’t stop there. During that same trip, I had one of those unexpected experiences that make life so exciting. As I described in my article “Off the Beaten Path in Tulum: How Getting Lost in a Tulum Rainstorm Brought Me to OG’s,” I ended up wandering into OG’s during a downpour. There, I met Carlos Garcia, a fifth-generation distiller from Casa Tlalpuyec. It’s hard to describe how inspiring it was to connect with someone so passionate about preserving his family’s traditions. We ended up recording an impromptu podcast episode, and it was the start of what I know will be a long-lasting collaboration and friendship.
These encounters have been more than just stories; they’ve highlighted the real purpose behind One Bite Foodie. The brands and creators we feature have shown immense appreciation for having their stories told. We’ve seen 100% of our featured businesses enthusiastically engage with the content, resharing it with their own networks and appreciating the unique platform we’ve built to showcase them. It’s these connections and the community we’re building that fuel our passion and drive to keep expanding One Bite Foodie.
Everyone loves an inside scoop. Can you share a fact or detail about you or your company that people might not know?
Absolutely, here’s an inside scoop you probably haven’t heard before—and it’s one of those stories that could only happen in a place like Tulum.
When I first arrived in Tulum, I was set up in a private villa for a couple of days, visiting the designer behind the Mexican clothing brand De La Rosa. The trip started out just as planned, with beautiful accommodations and plenty of inspiration. But when my time at the villa ended, I found myself standing in line at the ADO bus station, ready to head back to Cancun. As I stood there, I had this nagging feeling that I hadn’t fully experienced Tulum yet. So, on a whim, I stepped out of line and booked a three-day stay at Maui Hostel instead. That decision changed everything.
While staying at the hostel—this amazing, communal space filled with fellow travelers—I was sitting in the screened-in, thatched-roof kitchen, working on some code. I was struggling with a particularly frustrating error, and let’s be honest, I wasn’t in the best of moods. Just then, a guy with a French accent looked over and asked, “What’s the problem?” I remember thinking, Sure, he’s not going to understand this coding nightmare. But I explained it anyway, and to my surprise, he responded, “Sure, sure. I know. This is easy...”
That’s how I met Leo Poisson. I had to run off to another meeting, but when I got back, Leo was still there, working away at my code. He managed to fix the issue, and from that moment, our collaboration was set in motion. I ended up inviting Leo to join One Bite Foodie as a founding partner and developer, and he even received equity in the business. It’s wild to think that a random encounter in a Tulum hostel led to one of the most important partnerships for our company.
And yes, you might be wondering: Hostels? Really? But for me, hostels are a breeding ground for creativity and community. They’re a melting pot of travelers, artists, and yes, even talented web developers like Leo. One Bite Foodie was quite literally built in hostels across Cancun and Tulum, and I think that story embodies the adventurous, community-driven spirit of our brand. You never know who you’ll meet or how a simple conversation can change everything.
